An artisan cheese, 1608 is a unique cheese made exclusively from the milk of a Canadian cow from a single herd located in Charlevoix. It has a slightly moist pink rind and a smooth, unctuous and melt-in-the-mouth dark yellow paste. It gives off sweet smells of butter and nuts. To the taste, it is sweet and complex, revealing flavours of butter, green apple and a nutty finish.
